I only started playing as of recently, but I'm ordering it for the Switch cause I think I'd like it more on there

Ooh, is there a best class or like one that is considered the most fun? I've really been enjoying Witch Doctor so far.

There’s no really such thing as best class per se. Each class is different and every season all builds for classes are being slightly revamped. For example in current season (18) best “S tier” builds are two for wizard (vyr chantodo build and legacy of nightmares “bazooka”), one for necromancer (legacy of nightmares - thorns) and one for WD. 
Personally I think the most fun is the most challenging one - try playing with a necromancer  If your character is OP and can do Greater Rift of 100 level solo on a very early stage of game then what’s the fun in playing?  
WD is good but personally I found playing DH, Monk and Necromancer the most fun  Playing with Wiz is too easy.

No, when season is over your character stays and becomes a non seasonal character, all items goes to your stash and you keep paragon levels
